Crawfish & Shrimp Etouffee

Total Time: 1 hr 20 mins Preparation Time: 35 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1 cup unsalted butter
  • 1 cup flour
  • 4 cups diced yellow onions
  • 2 cups diced celery
  • 2 cups diced bell peppers (assorted colors)
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 teaspoons cayenne pepper
  • 1 tablespoon minced garlic
  • 1 1/2 cups water
  • 1/2 cup dry sherry
  • 1 tablespoon creole seasoning
  • 3 bay leaves
  • 1 (10 ounce) can rotel tomatoes (drained)
  • 1/2 cup chopped parsley
  • 1/2 cup chopped green onion
  • 1 teaspoon fresh thyme, chopped
  • 2 lbs shrimp, peeled & deveined
  • 1 lb crawfish tail
  • 8 cups steamed cooked rice (i prefer long grain)

Recipe

  • 1 in a large pot or dutch oven with the butter & flour over medium heat make a medium brown roux.
  • 2 add the onions, celery, bell pepper, bay leaves, salt, and cayenne & peppers. cook, stirring over medium high heat until onions, bell peppers & celery are soft, about 7 to 8 minutes.
  • 3 add the garlic & thyme and stir well for about a minute or so.
  • 4 add about 3/4 of the water and sherry & stir well.
  • 5 when the mixture comes to a boil add the rest of the water if needed. you want mixture to nearly coat a spoon.
  • 6 add rotel, parsley, green onions & creole seasoning, simmer about 6 minutes until mixture thickens. add shrimp & crawfish and simmer until seafood is done, until shrimp curl & turn pink.
  • 7 discard bay leaves & serve over steamed rice, garnish with parsley and green onions.

Crash Hot Sweet Potatoes

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 2 sweet potatoes (medium to large)
  • 1/2 teaspoon kosher salt
  • 2 quarts water
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1 1/2 tablespoons light brown sugar
  • 1/4-1/2 tablespoon kosher salt or 1/4-1/2 tablespoon sea salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon mexican chili powder
  • 1/2 teaspoon smoked sweet paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried chipotle powder or 1/4 teaspoon dried ancho chile powder
  • 1/8 teaspoon granulated garlic powder
  • 1/8 teaspoon fresh ground black pepper

Recipe

  • 1 peel the sweet potatoes and slice about 1 1/4 inches thick. to a pot filled with just enough water to cover the potatoes, add 1/2 teaspoon salt to the water; bring to a boil. add potato slices and simmer for about 12 minutes or until slightly softened. remove the slices carefully to a wire rack and allow to cool for about 10 minutes.
  • 2 in the meantime mix together the olive oil and butter; set aside.
  • 3 preheat oven to 350 degrees and line a large baking sheet with parchment paper or foil.
  • 4 in a small bowl, blend the topping ingredients together, making sure the sugar is completely distributed.
  • 5 using a flat-bottomed bowl or glass, slightly mash each potato slice, taking care that they stay intact. (note: if the bowl/glass sticks, rub a little olive oil on the bottom.) using only half of the oil/butter mixture, drizzle each slice with a mixture of the butter and oil.
  • 6 sprinkle the slices evenly with half the topping mixture, avoid getting the topping on the sheet between the slices, if possible, for it will burn and smoke before the potatoes are done. note: if the patties are firm enough, simply dip them into the mixture, patting to stick.
  • 7 gently turn over each slice, drizzle with the remaining butter/oil mixture and sprinkle with the remaining seasonings. place slices on prepared baking sheet.
  • 8 bake in the preheated oven for 20 minutes, carefully flipping each slice and return to oven for about 10 minutes more. serve immediately.

Cranbrosia Gelatin Mold

Ingredients

  • Servings: 10
  • 2 cups fresh cranberries or 2 cups frozen cranberries, coarsely ground
  • 1 cup sugar
  • 1 (11 ounce) can mandarin oranges
  • 1 (8 ounce) can sliced pineapple
  • 2 (3 ounce) packages unflavored gelatin
  • 1 cup sour cream
  • 1 cup heavy whipping cream
  • 2 tablespoons confectioners' sugar

Recipe

  • 1 in a bowl, combine cranberries and sugar.
  • 2 let stand for 30 minutes or until sugar is dissolved, stirring occasionally.
  • 3 drain juice from oranges and pineapple,reserving 3/4 cup juice.
  • 4 cut pineapple into small pieces.
  • 5 set fruit aside.
  • 6 in a small saucepan, sprinkle gelatin over reserved juice; let stand for one minute.
  • 7 cook and stir over low heat until gelatin is dissolved, about 2 minutes.
  • 8 add to cranberry mixture; stir in oranges and pineapple.
  • 9 fold in sour cream.
  • 10 in a small mixing bowl, beat cream until it begins to thicken.
  • 11 add confectioners sugar, beat until soft peaks form.
  • 12 fold into fruit mixture.
  • 13 pour into a 6 cup ring mold or 12 individual mold lightly coated with nonstick cooking spray.
  • 14 refrigerate until set.
  • 15 unmold before serving.

Crawfish And Artichoke Appetizer

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 lb peeled crawfish tail
  • 1 tablespoon butter or 1 tablespoon olive oil
  • 1 (13 1/2 ounce) can artichoke hearts, drained and quartered
  • 1/2 cup mayonnaise
  • 3 ounces cream cheese
  • 1/2 cup shredded asiago cheese
  • 1/2 cup green chili salsa
  • 1/4 cup chopped green onion

Recipe

  • 1 in a small skillet, sauté crawfish tails in butter or olive oil for about 2 minutes to until warm--do not overcook.
  • 2 in a bowl, combine crawfish, pan juices, artichokes, mayonnaise, cream cheese, asiage cheese, and salsa.
  • 3 stir in green onions.
  • 4 pour into a greased casserole dish and bake at 350 degrees for about 20 minutes or until hot.
  • 5 for low carb eaters, serve with low card crackers or chips or over low carb pasta.
  • 6 for others, serve as a dip on crackers or as a topping for pasta.

Cranky Egg Sandwich

Ingredients

  • 1 slice english muffin, toasted (sourdough, original or whole wheat)
  • 1 egg, beaten
  • 1 dash garlic salt
  • 1 slice cheese
  • 1 slice deli ham or 1 slice deli chicken or 1 slice bacon or 1 slice sausage patty
  • 1 slice butter
  • syrup (optional)
  • jam (i use raspberry) (optional)

Recipe

  • 1 split english muffin into two and put in toaster, till desired crispness.
  • 2 meanwhile, in heated buttered (or nonstick) skillet cook beaten egg omelet style. sprinkle garlic salt on top and flip over to cook both sides. put cheese in middle of egg and fold edges of egg over cheese, like an envelope.
  • 3 on other side of pan cook the meat. if using precooked sandwich meat, just need to heat up.
  • 4 slide cooked meat on top of egg & cheese to help seal in the melting cheese.
  • 5 english muffin should be toasted by now and can be prepared by spreading on butter.
  • 6 slide egg, cheese and meat stack on to one side of english muffin and top with second side.
  • 7 also can change taste by omitting one ingredient or adding more. try croissants, bread or biscuits. or different cheeses, spices and meats. most ingredients can be prepared the night before too (like splitting the bread, beating the egg). enjoy!

Cranraspberry And Apple Jello

Ingredients

  • Servings: 12
  • 2 (3 ounce) boxes cranberry-raspberry gelatin
  • 2 cups boiling water
  • 1 cup cold water
  • 1 (16 ounce) can jellied cranberry sauce
  • 4 ounces cream cheese
  • 1 tablespoon sugar
  • 1 diced granny smith apple

Recipe

  • 1 bring 2 cups of water to a boil. add jello and stir until dissolved. remove from heat.
  • 2 stir in cranberry sauce and 1 cup cold water.
  • 3 place mixing bowl, in larger bowl of ice. stir every few minutes.
  • 4 when jello is almost set take the cream cheese and sugar and mix with electric hand mixer until smooth. add to jello. add apple to jello. stir very well until every thing is mixed together pour into 8x8 pan. refrigerate over night.

Cranberry-raisin Pumpkin Bread

Ingredients

  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 6 tablespoons butter or 6 tablespoons margarine
  • 1 cup sugar
  • 2 eggs
  • 1 cup canned pumpkin
  • 1 teaspoon vanilla
  • 2/3 cup buttermilk
  • 1/2 cup dried sweetened cranberries (craisins)
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts (optional)

Recipe

  • 1 preheat oven to 350-degrees f.
  • 2 spray loaf pan (9"x5") with cooking spray.
  • 3 sift dry ingredients (flour- baking powder) together in small bowl.
  • 4 set aside.
  • 5 cream butter or margarine in large bowl of electric mixer.
  • 6 gradually add sugar.
  • 7 beat in eggs, one at a time.
  • 8 add pumpkin and vanilla.
  • 9 add dry ingredients alternately with buttermilk.
  • 10 fold in cranberries, raisins and walnuts (if using).
  • 11 transfer batter to prepared pan.
  • 12 bake for 1 hour 10 minutes or until toothpick comes out clean.
  • 13 cool in pan on cooling rack for 15 minutes before inverting bread on cooling rack to finish cooling.
