Cowboy Hotpot

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3 tablespoons oil
  • 1 onion
  • 1 green pepper
  • 2 carrots
  • 125 g frozen green beans
  • 1 (400 g) can vegetarian baked beans
  • 1 (200 g) can sweet corn (undrained)
  • 1 tablespoon tomato puree
  • cheese, see note
  • 450 g potatoes, par boiled and sliced
  • 2 tablespoons melted butter
  • paprika

Recipe

  • 1 grate or cube the cheese to suit your taste.
  • 2 gently fry onion, pepper and carrot in oil until softened.
  • 3 add green beans, baked beans, sweet corn, and tomato puree.
  • 4 bring to the boil, and simmer five minutes.
  • 5 transfer to a baking dish and scatter with cheese.
  • 6 cover with sliced potatoes, brush with butter, and sprinkle with paprika.
  • 7 bake 180c 30-40 minutes until potatoes are cooked.

Cowboy Hamburgers

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb lean ground beef
  • 2 -4 garlic cloves, minced
  • 5 -6 dashes worcestershire sauce
  • 1/2 teaspoon seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup hot barbecue sauce or 1/4 cup hearty barbecue sauce
  • 4 kaiser rolls or 4 hamburger buns

Recipe

  • 1 in medium bowl, combine all ingredients mixing lightly but thoroughly.
  • 2 shape into 4 patties.
  • 3 place patties on grid over medium ash-covered coals.
  • 4 grill uncovered 14-16 minutes or until internal temperature reaches 160 degrees, turning once.

  • 1 (12 ounce) package biscuits

Recipe

  • 1 brown the beef and mix in some barbecue sauce.
  • 2 while the beef is cooking, flatten out the biscuits with a rolling pin and lay them in a muffin pan.

  • 4 medium potatoes
  • 1 onion, sliced in rings
  • 1 lb hamburger
  • 1 (16 ounce) can baked beans
  • 1 (10 3/4 ounce) can tomato soup
  • 6 slices cooked bacon, diced
  • 1 cup shredded cheddar cheese

Recipe

  • 1 brown and drain hamburger.
  • 2 slice potatoes in 2 qt casserole.
  • 3 put onion rings on top of potatoes.
  • 4 cover with hamburger, followed by beans.
  • 5 spread soup on top.
  • 6 bake, covered at 350 for 1 and 1/2 hours.
  • 7 uncover, sprinkle bacon bits and cheese on top.
  • 8 bake another 10 minutes.

Cowboy In A Shroud

Ingredients

  • Servings: 6
  • 1 lb boneless skinless chicken thighs or 1 lb boneless skinless chicken breast
  • 1 cup chicken broth
  • 1 (14 1/2 ounce) can diced tomatoes
  • 2 (11 ounce) cans condensed nacho cheese soup, undiluted
  • 1 (4 ounce) can diced green chilies, drained
  • 6 (8 inch) flour tortillas
  • 1 cup four-cheese mexican blend cheese
  • 4 roasted red peppers
  • capers, and
  • peppercorn, and
  • minced fresh cilantro, for garnish

Recipe

  • 1 preheat oven to 350°f place chicken in small saucepan with broth. cover; cook over low heat 20 minutes or until chicken reaches internal temperature of 180°f remove from heat and reserve broth. cut chicken into bite-size strips. set aside.
  • 2 combine tomatoes, nacho cheese soup and chiles in bowl. divide nacho cheese soup mixture in half. add chicken to one half and 1/2 cup reserved chicken broth to other half.
  • 3 spoon chicken mixture down center of each flour tortilla; roll up. tortillas will be very full.
  • 4 pour half of nacho-chicken broth mixture into 9- to 10-inch square glass baking dish. arrange filled tortillas seam-side down in baking dish, packing tightly. spoon on remaining nacho-chicken broth mixture. sprinkle with cheese. bake 20 to 25 minutes or until filling is hot and cheese is melted.
  • 5 garnish with slice of roasted red pepper, cut into 3-inch triangle for "bandana." make cowboy face with capers, peppercorns or cilantro.

Cowboy Pie

Ingredients

  • Servings: 6
  • 1 1/2 lbs lean ground beef
  • 1 package taco seasoning
  • 12 ounces shredded cheddar cheese
  • 1 jar pace picante sauce
  • 2 packages jiffy cornbread mix

Recipe

  • 1 brown the ground beef and follow the directions on taco seasoning packet as though you are making tacos.
  • 2 in a casserole dish first add taco meat then sprinkle shredded cheese evenly over the meat.
  • 3 next evenly spread the pace over cheese.
  • 4 prepare the corn bread mix as package instructs you to and pour over meat mixture.
  • 5 bake in a pre heated 350 oven for 30 minutes or until corn bread is cooked through.
  • 6 i serve this with sour cream and more salsa.
  • 7 you can also sprinkle the top of the corn bread before baking with green chilis.

Cowboy's Brisket

Total Time: 4 hrs Preparation Time: 1 hr Cook Time: 3 hrs

Ingredients

  • Servings: 4
  • 4 lbs first cut briskets of beef
  • 3 garlic cloves, slivered
  • 3 garlic cloves, crushed
  • 4 large onions, thinly sliced
  • 1 cup apple vinegar
  • 1 1/2 tablespoons bacon fat
  • 1 cup strong black coffee
  • salt & pepper
  • 1/2 cup water

Recipe

  • 1 with a long thin, sharp knife, make slits in the meat and insert the slivers of garlic.
  • 2 place the meat in a bowl, spread 1 sliced onion and the crushed garlic over the meat, and pour in the vinegar.
  • 3 marinate for 6 hours at room temperature or overnight in the refrigerator, turning several times.
  • 4 when ready to cook, preheat the oven to 350 degrees f.
  • 5 heat the bacon fat in a deep, heavy skillet large enough to hold the brisket.
  • 6 remove the brisket from the marinade and discard the onion and vinegar.
  • 7 dry with paper towels.
  • 8 brown the meat well on all sides.
  • 9 remove brisket to a platter.
  • 10 in the fat remaining in the skillet, saute the remaining sliced onions until deeply browned.
  • 11 pour in 1/2 cup coffee.
  • 12 bring to a boil, stirring and scraping the bottom of the skillet to loosen the browned bits.
  • 13 spread the onions and liquid from the skillet in a shallow baking dish.
  • 14 place the brisket on the onions.
  • 15 season with salt and freshly ground pepper to taste.
  • 16 pour in the remaining coffee and water.
  • 17 cover tightly with foil and place in oven for 1/2 hour.
  • 18 turn the oven down to 250 degrees f. and bake for an additional 2 hours or until meat is very tender.
  • 19 slice the brisket thinly against the grain.
  • 20 skim the fat from the pan liquid.
  • 21 return the meat slices to the pan.
  • 22 serve at once or refrigerate for later use.
