Blueberry Summer Cobbler

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1/2 cup third less fat margarine, such as imperial
  • 1 cup self-rising flour
  • 1/2 cup sugar substitute, divided
  • 3/4 cup nonfat milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1/2 cup water
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 melt margarine in a shallow 1-1/2 quart baking dish.
  • 3 combine flour, 1/4 cup sugar, milk and vanilla in mixing bowl; pour evenly over melted margarine.
  • 4 combine berries, remaining 1/4 cup sugar (which has been combined with cinnamon& nutmeg) and water.
  • 5 spoon evenly over flour mixture.
  • 6 do not stir.
  • 7 bake 40 to 45 minutes, until bubbling and top is golden brown.
