Basle Flour Soup

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 4 tablespoons flour
  • 1 1/4 liters bouillon
  • 50 g grated cheese

Recipe

  • 1 melt the butter.
  • 2 add 2 tbsp flour and brown lightly, stirring constantly.
  • 3 add remaining flour, stir in, and remove pan from heat.
  • 4 pour in bouillon and stir well--be sure not to let it get lumpy!
  • 5 simmer at low heat for a minimum of 45 minutes, stirring occasionally.
  • 6 serve topped with grated cheese.
  • 7 optional: top with onion rings, croutons, chopped parsley or chives, etc.
