Coq Au Vin

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 2
  • 1 tablespoon margarine
  • 1 1/2 lbs chicken parts, skin removed
  • 1/4 cup flour
  • 1/2 cup sliced onion
  • 14 ounces canned tomatoes, with juice,mashed
  • 2 cups mushrooms, small whole fresh
  • 1 bay leaf
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon sugar
  • salt, to taste
  • pepper, to taste
  • 1/4 cup red

Recipe

  • 1 melt margarine in frying pan.
  • 2 dip chicken in flour.
  • 3 brown both sides of chicken in margarine.
  • 4 transfer chicken to ungreased 1 1/2 quart casserole dish.
  • 5 add onion to pan; saute till browned.
  • 6 add next 7 ingredients to onion; stir; cover.
  • 7 cook slowly for 5 minutes.
  • 8 discard bay leaf.
  • 9 stir in .
  • 10 pour over chicken; cover.
  • 11 bake in 350f over for 1 to 1 1/2 hours until tender.
