Copycat Zuppa Toscana

Ingredients

  • Servings: 4
  • 1 lb hot italian sausage
  • 1/2 lb bacon
  • 1 medium onion (diced)
  • 2 tablespoons garlic (minced)
  • 4 russet potatoes (halved and sliced)
  • 4 cups water
  • 2 tablespoons chicken soup base
  • 3/4 cup milk
  • 1/2 bunch kale

Recipe

  • 1 in a large pot crisp bacon, remove from pan and set aside.
  • 2 add hot italian sausage to pan and brown and crumble
  • 3 remove excess fat from pot and add onion and garlic.
  • 4 crumble bacon then add to pot.
  • 5 cook til onions are translucent.
  • 6 add water, chicken soup base, and potatoes
  • 7 cover and simmer til potatoes are fork tender
  • 8 uncover and add milk and kale.
  • 9 cook til kale is tender.
  • 10 enjoy.
