Baked Mashed Potatoes

Ingredients

- 2 lbs potatoes, peeled and quartered
- 1/4 cup milk
- 1/2 teaspoon salt
- 2 tablespoons melted butter, divided
- 1 egg, beaten
- 1 cup sour cream
- 1 cup small curd cottage cheese
- 5 green onions, chopped finely
- 1/2 cup crushed ritz cracker
Recipe
- 1 cook potatoes.
- 2 place in a small bowl and add milk, salt and 1 tb butter.
- 3 beat until light and fluffy.
- 4 fold in egg, sour cream, cottage cheese and onion.
- 5 place in greased 1 1/2 quart baking dish (8x8 pan).
- 6 combine crushed crackers and 1 tb butter and sprinkle on top.
- 7 bake for 20 - 30 mins at 350*.
