Blueberry Streusel Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 1 3/4 cups all-purpose flour
  • 2/3 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries or 1 cup frozen blueberries, rinsed and drained
  • 2 tablespoons flour
  • 1/4 cup chopped toasted pecans
  • 1/4 cup brown sugar, packed
  • 1/4 cup all-purpose flour
  • 1/4 cup quick oats
  • 2 tablespoons butter, melted

Recipe

  • 1 preheat oven to 375°f.
  • 2 toss rinsed blueberries in 2 tablespoons flour until they are coated.
  • 3 gently mix all ingredients for muffins.
  • 4 separately, mix streusel ingredients until crumbly.
  • 5 grease a 12 cup muffin tin and fill with muffins batter.
  • 6 top muffin batter with streusel.
  • 7 bake for 25-30 minutes.
  • 8 cool 10 minutes before removing from pan.
