Blueberry Streusel Muffins

Ingredients

- 1 3/4 cups all-purpose flour
- 2/3 cup brown sugar
- 2 teaspoons baking powder
- 1/2 cup buttermilk
- 1/2 cup unsalted butter, melted
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries or 1 cup frozen blueberries, rinsed and drained
- 2 tablespoons flour
- 1/4 cup chopped toasted pecans
- 1/4 cup brown sugar, packed
- 1/4 cup all-purpose flour
- 1/4 cup quick oats
- 2 tablespoons butter, melted
Recipe
- 1 preheat oven to 375°f.
- 2 toss rinsed blueberries in 2 tablespoons flour until they are coated.
- 3 gently mix all ingredients for muffins.
- 4 separately, mix streusel ingredients until crumbly.
- 5 grease a 12 cup muffin tin and fill with muffins batter.
- 6 top muffin batter with streusel.
- 7 bake for 25-30 minutes.
- 8 cool 10 minutes before removing from pan.
