Big B's Pancakes (dairy Free, Diabetic Friendly)

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 1 cup flour
  • 1 cup water
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 egg

Recipe

  • 1 mix all ingredients with an electric beater until smooth batter.
  • 2 heat a non-stick frying pan on high.
  • 3 pour enough batter into pan to cover the bottom.
  • 4 shake the pan gently after 2-3 minutes; if the pancake lifts, it is cooked; if not, cook for another few minutes and try shaking it again until cooked.
  • 5 flip or turn and fry on other side for 2-3 minutes until brown.
  • 6 fill with mince or cheese for a savoury meal, or with cinnamon & sugar for a snack or ice cream & chocolate sauce for dessert.
