Baked Apples With Philly Custard

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 4 apples (pink lady or lady williams)
  • 250 ml dessert wine
  • 1 cinnamon stick
  • 1/4 cup brown sugar
  • 250 g cream cheese spread
  • 1/2 cup milk
  • 2 tablespoons caster sugar
  • 1 vanilla bean, split
  • 1 tablespoon custard powder, blended with
  • 1 tablespoon milk, to form a paste
  • 1 teaspoon arrowroot

Recipe

  • 1 cut apples into three slices, place into a large shallow baking dish with the wine and cinnamon. sprinkle over the brown sugar. bake at 180°c for 20 minutes until tender. spooning the syrup over the apples occasionally.
  • 2 whisk together the cream cheese and milk. heat in a saucepan. add sugar, vanilla bean and custard powder paste. bring to the boil, stirring until thickened.
  • 3 remove apples from syrup, and keep warm. pour syrup into a small saucepan. combine arrowroot with some of the syrup to form a paste. add to saucepan, and simmer until thickened. serve apple slices with syrup and custard.
