Ingredients

- 1 skinless chicken breast
- 1/2 tablespoon soy sauce
- 1/4 tablespoon rice vinegar
- 1/2 onion, sliced
- 1/2 bell pepper, sliced
- 1 small carrot, sliced
- 2 ounces baby corn
- 5 water chestnuts, sliced
Recipe
- 1 preheat oven to 350°f.
- 2 put the chicken in a baking dish; pour over the soy sauce and vinegar, and then top with the vegetables.
- 3 bake for about 40 minutes or until the chicken is cooked through and no longer pink in the middle.
- 4 cover with foil half-way through the cooking time.
