Asian Baked Chicken For One (or More!)

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 1
  • 1 skinless chicken breast
  • 1/2 tablespoon soy sauce
  • 1/4 tablespoon rice vinegar
  • 1/2 onion, sliced
  • 1/2 bell pepper, sliced
  • 1 small carrot, sliced
  • 2 ounces baby corn
  • 5 water chestnuts, sliced

Recipe

  • 1 preheat oven to 350°f.
  • 2 put the chicken in a baking dish; pour over the soy sauce and vinegar, and then top with the vegetables.
  • 3 bake for about 40 minutes or until the chicken is cooked through and no longer pink in the middle.
  • 4 cover with foil half-way through the cooking time.
