Blackberry Buckle

Ingredients

  • Servings: 6
  • 4 cups fresh blackberries
  • 1 1/2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 6 tablespoons butter
  • 1 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1/8 teaspoon ground cinnamon
  • 1 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 1/2 tablespoons turbinado sugar

Recipe

  • 1 preheat the oven to 350 degrees.
  • 2 in a small bowl, combine the first four ingredients and set aside.
  • 3 place the butter in a 2 quart baking dish and place it in the oven to melt the butter.
  • 4 in a medium bowl combine the flour, 3/4 cup granulated sugar, baking powder, salt and cinnamon.
  • 5 in a small bowl combine the milk and vanilla.
  • 6 add this mixture to the flour mixture.
  • 7 mix until moist.
  • 8 remove the baking dish from the oven.
  • 9 spread the batter on top of the butter. the melted butter will peek up around the edges a bit.
  • 10 layer the blackberry mix on top of the batter. press the blackberries down into the batter a bit.
  • 11 bake for 45 minutes.
  • 12 sprinkle with the coarse sugar and bake for 5-10 more minutes or until the batter has reached a beautiful golden brown.
