Baked Chicken Chimichangas

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 cups picante sauce
  • 3 teaspoons ground cumin
  • 4 1/2 cups chicken, cut into very small pieces and cooked and preferably breasts
  • 3 cups cheddar cheese, shredded
  • 3/4 cup green onion, chopped
  • 8 (10 inch) flour tortillas
  • 3 tablespoons butter
  • 1 jalapeno, finely diced (optional)

Recipe

  • 1 preheat the oven to 400*f.
  • 2 mix chicken, picante sauce, cumin, cheese, onions, and jalapenos (if using) and stir well.
  • 3 evenly distribute the mixture between the 8 tortillas, placing the filling in the middle of each tortilla.
  • 4 fold opposite sides over filling.
  • 5 roll up from bottom and place seam side down and place on a wire rack positioned on a baking sheet.
  • 6 spread a bit of butter on top of each chimichanga.
  • 7 bake for 25 minutes.
  • 8 garnish with things such as shredded cheddar, picante sauce, salsa, or whatever you like if you want to.
