Baked Chicken Chimichangas

Ingredients
- 2 cups picante sauce
- 3 teaspoons ground cumin
- 4 1/2 cups chicken, cut into very small pieces and cooked and preferably breasts
- 3 cups cheddar cheese, shredded
- 3/4 cup green onion, chopped
- 8 (10 inch) flour tortillas
- 3 tablespoons butter
- 1 jalapeno, finely diced (optional)
Recipe
- 1 preheat the oven to 400*f.
- 2 mix chicken, picante sauce, cumin, cheese, onions, and jalapenos (if using) and stir well.
- 3 evenly distribute the mixture between the 8 tortillas, placing the filling in the middle of each tortilla.
- 4 fold opposite sides over filling.
- 5 roll up from bottom and place seam side down and place on a wire rack positioned on a baking sheet.
- 6 spread a bit of butter on top of each chimichanga.
- 7 bake for 25 minutes.
- 8 garnish with things such as shredded cheddar, picante sauce, salsa, or whatever you like if you want to.
