Cornmeal Chicken Parmesan

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 2 large eggs
  • 1/2 cup yellow cornmeal mix
  • 1/2 cup panko breadcrumbs (japanese-style breadcrumbs)
  • 1 (2/3 ounce) package dried italian salad dressing mix
  • 4 boneless skinless chicken breasts
  • 1/2 cup olive oil
  • 1 (26 ounce) jar marinara sauce
  • 1 cup parmesan cheese, finely shredded
  • 1 cup mozzarella cheese, grated
  • chopped fresh parsley, for garnish

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in shallow dish, lightly beat eggs.
  • 3 in separate shallow dish, combine cornmeal mix, panko and seasoning mix.
  • 4 dip chicken in eggs; dredge in cornmeal mixture.
  • 5 in a large nonstick skillet, heat olive oil over medium heat.
  • 6 cook chicken 2-3 minutes per side or until lightly browned.
  • 7 place in a 13x9-inch casserole dish.
  • 8 bake for 15 minutes.
  • 9 top with pasta sauce and bake 15 minutes.
  • 10 top with cheese and bake 15 minutes.
  • 11 garnish with parsley, if desired.
