Cornmeal Chicken Parmesan

Ingredients

- 2 large eggs
- 1/2 cup yellow cornmeal mix
- 1/2 cup panko breadcrumbs (japanese-style breadcrumbs)
- 1 (2/3 ounce) package dried italian salad dressing mix
- 4 boneless skinless chicken breasts
- 1/2 cup olive oil
- 1 (26 ounce) jar marinara sauce
- 1 cup parmesan cheese, finely shredded
- 1 cup mozzarella cheese, grated
- chopped fresh parsley, for garnish
Recipe
- 1 preheat oven to 350 degrees.
- 2 in shallow dish, lightly beat eggs.
- 3 in separate shallow dish, combine cornmeal mix, panko and seasoning mix.
- 4 dip chicken in eggs; dredge in cornmeal mixture.
- 5 in a large nonstick skillet, heat olive oil over medium heat.
- 6 cook chicken 2-3 minutes per side or until lightly browned.
- 7 place in a 13x9-inch casserole dish.
- 8 bake for 15 minutes.
- 9 top with pasta sauce and bake 15 minutes.
- 10 top with cheese and bake 15 minutes.
- 11 garnish with parsley, if desired.
