Cookies And Cream Cupcakes

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 1 cup sweet butter, softened
  • 1 cup superfine sugar
  • 2 cups self-rising flour
  • 1 teaspoon baking powder
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 10 oreo cookies, crushed
  • 3 cups powdered sugar, sifted
  • 1 cup sweet butter, softened
  • 1 pinch salt
  • 10 oreo cookies, chopped

Recipe

  • 1 preheat oven to 350°; place 18 baking cups in muffin pans.
  • 2 combine all the cupcake ingredients, except the cookies, in a big bowl; beat with an electric mixer until smooth and pale, about 2-3 minutes; stir in the cookies.
  • 3 spoon batter into cups; bake for 20 minutes; remove pans from oven and cool for 5 minutes; then remove cupcakes and cool on wire rack.
  • 4 make the frosting: beat powdered sugar, butter, and salt using an electric mixer; spread frosting cooled cupcakes.
  • 5 sprinkle the chopped cookies on top.
