Baked Mushroom Omelette

Ingredients
- Servings: 2
- 2 eggs (or 4 eggwhites)
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 125 g low-fat ricotta cheese
- 1 tomato, chopped
- 1 small onion, peeled and chopped
- 6 mushrooms, sliced
- salt and pepper
Recipe
- 1 mix together eggs, cheese, basil & oregano.
- 2 add tomato, onion and mushrooms. season to taste.
- 3 spoon mixture into buttered baking dish.
- 4 bake at 180 degrees celcius for 25 - 30 minutes.
