Acorn Carrot Cake

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 16
  • 2/3 cup flour
  • 2/3 cup sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup low-fat yogurt
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 2 cups carrots, grated
  • 2/3 cup acorn, ground
  • 1/2 cup pecans, ground

Recipe

  • 1 preheat oven to 350°f.
  • 2 grease and flour a 13x9 inch pan.
  • 3 mix dry ingredients.
  • 4 stir in yogurt, oil, and eggs.
  • 5 stir in carrots and nuts.
  • 6 spread evenly in pan.
  • 7 bake until a knife inserted in the center comes out clean, about 30 minutes.
  • 8 cool slightly on a rack, then remove from pan to finish cooling.
