Acorn Carrot Cake

Ingredients

- 2/3 cup flour
- 2/3 cup sugar
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup low-fat yogurt
- 1/4 cup vegetable oil
- 3 large eggs
- 2 cups carrots, grated
- 2/3 cup acorn, ground
- 1/2 cup pecans, ground
Recipe
- 1 preheat oven to 350°f.
- 2 grease and flour a 13x9 inch pan.
- 3 mix dry ingredients.
- 4 stir in yogurt, oil, and eggs.
- 5 stir in carrots and nuts.
- 6 spread evenly in pan.
- 7 bake until a knife inserted in the center comes out clean, about 30 minutes.
- 8 cool slightly on a rack, then remove from pan to finish cooling.
