Black And Chicken Chili

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 8 boneless skinless chicken breasts
  • 1 large onion, chopped
  • 14 ounces chicken broth
  • 2 fresh jalapeno peppers, seeded and finely chopped
  • 1 tablespoon garlic, chopped
  • 2 (15 ounce) cans great northern beans, undrained
  • 2 (15 ounce) cans black beans, drained
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt

Recipe

  • 1 cut chicken into 1/2-inch cubes.
  • 2 spray large, deep pot or saucepan with nonstick cooking spray.
  • 3 heat over medium-high. add chicken; cook 2 minutes, stirring frequently. add onion, chilies and garlic. cook 5 minutes longer, stirring occasionally. add remaining ingredients.
  • 4 bring to a boil.
  • 5 reduce heat; simmer, uncovered, 20 to 30 minutes or until chicken is done (internal temp 170°f).
