Banana Wheat Bagel Dough

Total Time: 38 mins Preparation Time: 15 mins Cook Time: 23 mins

Ingredients

  • 1 egg, room temperature
  • 1 cup water (enough to equal 80f/27c)
  • 2 tablespoons oil
  • 1 tablespoon honey
  • 1 1/2 teaspoons salt
  • 1/2 cup mashed banana
  • 2 1/2 cups whole wheat flour
  • 1 cup bread flour
  • 2 1/4 teaspoons red star active dry yeast or 1 1/2 teaspoons red star fast rising yeast or 1 1/2 teaspoons bread machine yeast
  • 1 egg , beaten
  • 1 tablespoon water
  • poppy seeds or sesame seeds

Recipe

  • 1 place bagel dough ingredients into bread machine container as directed in bread machine manual.
  • 2 set bread machine to dough cycle and run machine.
  • 3 place on a lightly floured surface. divide into pieces. roll each in a small ball, making a hole in the center of each with thumbs. gently pull to make a one-inch hole.
  • 4 place on a greased baking sheet. cover and let rise in a warm place for 30 minutes or until double in size.
  • 5 in a 3-quart saucepan, bring to a boil 2 quarts water and 2 tablespoons sugar. place a few bagels at a time in boiling water. simmer 3 minutes turning once. remove with slotted spoon and put back on greased baking sheet.
  • 6 brush with egg and sprinkle with choice of toppings. bake at 400 f/205 c for 20-25 minutes or until done; cool on a wire rack.
