Baked Chicken Breasts With Sage Shallot Apple Dressing

Ingredients
- Servings: 4
- 4 chicken breasts, boneless and skinless
- 1 tablespoon butter
- 1/3 cup finely chopped shallot
- 1 cup finely chopped tart apple
- 2 tablespoons chopped fresh sage
- 2 tablespoons chopped fresh parsley
- 2 cups dried bread cubes or 2 cups croutons
- salt and pepper
- 1/2-2/3 cup chicken broth
Recipe
- 1 oil a baking pan.
- 2 trim chicken of all fat; flatten meat by pounding it lightly.
- 3 place in pan. heat oven to 350.
- 4 cook shallots in butter on stove top until tender, 4-5 minutes.
- 5 stir in apples, herbs, bread cubes, salt, pepper and just enough chicken broth to make a moist stuffing.
- 6 mound on chicken.
- 7 bake until stuffing has browned and chicken is tender, 20-25 minutes.
