Alfredo's Southwestern Potato Soup

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 (20 ounce) package simply potatoes diced potatoes with onion
  • 1 (16 ounce) jar ragu cheesy classic alfredo sauce
  • 4 slices thick cut bacon, rough chopped
  • 4 green onions, chopped ( & pale green parts for soup, tops for garnish)
  • 1 (1 1/4 ounce) package taco seasoning (used mccormicks hot)
  • 2 cups milk (divided)
  • 1 1/2 tablespoons flour
  • 3 tablespoons vegetable oil

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 toss potatoes with vegetable oil and taco seasoning.
  • 3 roast potatoes for 30 minute tossing once halfway thru.
  • 4 in 4-6 quart sauce pan, cook bacon till crisp, remove bacon, drain and reserve.
  • 5 drain all but 1 - 1/2 tbls. bacon grease. add green onions and saute 1 minute until soft.
  • 6 add flour and whisk 1-2 minute.
  • 7 add 1 cup milk and whisk until slightly thickened, 1-3 minute.
  • 8 add alfredo sauce and stir to combine.
  • 9 add potatoes and reserved bacon and stir.
  • 10 add balance of milk to desired consistency, reduce heat, cover & simmer 10 minutes.
  • 11 serve with green onion tops as garnish.
